Recipe:
Ingredients
3 Cardamoms (Buah Pelaga)
4 Cloves (Bunga Cengkih)
2 Inches of Cinnamon Sticks (Kulit Kayu Manis)
1 tsp of Black Peppercorns (Lada Hitam)
2 Whole Star Anise (Bunga Lawang)
Red Snapper (Ikan Merah)
4 Onions (Bawang Besar)
4 Garlics (Bawang Putih)
2 Inches of Ginger (Halia)
1 Tomato
1 Carrot
1 litre of Water
1 tbs of Salt
Pinch of Sugar
Step 1 – Making the Spice Bag (Bunjut)
Cardamoms
Cloves
Cinnamon sticks
Black peppercorn
Star anise
Step 2 – Making the Soup
1) In a pot sauté the onions, halfway.
2) Add in garlic & ginger & continue to sauté until golden brown & fragrance.
3) Pour in water & add in the spice bag.
4) Once boiling, add in fish head bring to a boil.
5) Season with salt & sugar.
6) Add in carrot and let it simmer.
7) Add in tomato, and DONE!
To serve, garnish with Calamansi, Red Chilli, Fresh Coriander & Crispy Fried Onion.
